Baking Chocolate is a little bit different than regular eating chocolate. If you buy regular chocolate, or chocolate chips, for baking, it may not hold together as well as baking chocolate. Backing chocolate usually contains no sugar. If you use chocolate with sugar your recipe might end up a lot sweeter than you had intended!

In some places white chocolate is not really considered chocolate. White Chocolate does not contain any cocoa solids. Cocoa solids are what make chocolate a dark color. When these are not in the chocolate, then the chocolate will be white.
